I bought a 1999 Galant ES about two weeks ago with 109,000 miles on it. As i do not know what the previous owner has done to the car. I would like you guys to tell me what i should i looking at and changing to make the car continue to run well.

Since it is somewhat near the 120,000 mile mark, and since you don't know what the previous owner has done, changing the timing belt would be a definite thing you should do

Make sure the timing belt was replaced. Also check the trans fluid for any shavings and make sure it is red. If it is, dont flush it. Check all the belts, Battery terminals, plugs, wires, coils (If I4), Basically do a complete tune up if the previous owner havent done so.

timing belt and all the corresponding belts and pulleys. Change all fluids, radiator, brake, oil, transmission, etc

I changed all the fluids from the first day i got it. Around how much would it cost to change the belts?

My dealer charges around 500 to change a belt, thank god mine was changed right before the owner had sold the car.

replace the water pump when you replace the timing belt.
