Just picked this amp up at a local shop that was going out of business for $100. I am building a custom box for a single 12" sub in the corner of the truck to save space. My question is what would be the best speaker to pair this with, and the correct way to wire it up, for optimum power and quality.

that's gonna be a mighty strong sub if it states 2500 at 2 ohms, which would be the best way to wire. You'd want to get a dual voice coil 4 ohm sub, or a single voice coil 2 ohm sub and wire it bridged to the amp. The name brand that comes to the top of my head for that much watts are Kicker and JL Audio.. only because i haven't done sub research in quite some time. let me dust my shoulders off and review

You might look into a kicker L7 also.

i was assuming that since he was building a custom box he was looking for a round sub but an L7 would also suffice, that's what I run

why not just match it up to the same brand subwoofer?

also those amp ratings are suspect. i don't think those are RMS but rather peak. you could probably get away w/ a sub w/ half those numbers since i don't believe that amp is pushing those numbers RMS.

I'd go type x from Alpine durable sub I beat the shit out of my type S 12's from Alpine and the cones are in perfect shape

their sub doesnt look bad, cant find an RMS rating though
