Maybe the ac clutch is starting to seize up.
On cold days when I first start the car and have the defrost going it squeals unbelievably loud (I thought I hit a pig at first) and lasts for about 15 -30 seconds. Once the squealing stops there is a rather large increase in power, which is the part that confuses me. I thought it was just the A/C going bad but I'm not sure if that would cause a power difference?

A/C should be off on heat. You may have moisture in the belt or needs tightening.
But as already mentioned, a/c clutch may be going.
Belts are tight and were replaced a couple years ago. Is the A/C clutch an expensive fix?

Just had this. Belts were done a few years ago and look to be in good condition, however the AC belt was loose and was slightly off. Realigned, re tightened, no issue
Alright cool I'll look into it.

The compressor is on during defrost. If it is in fact seized it would cause the engine to load up because the pulley is not freely spinning causing the power drip
^^But if its seized wouldn't it not work at all?
